Today my recipe is a giant Mediterranean Microgreen salad with about 15 super healthy ingredients I had around. I don't discriminate much for salads, I put anything in there that seems like it might work with whatever dressing I'm using. So this one has: radish, sunflower, pea and broccoli Microgreens, mixed beans, raw cauliflower, roasted eggplant, tomatoes, cucumbers, pickled yellow beans, marinated artichokes with hummus, a bit of lemon juice, black pepper and cilantro. I go heavy on the hummus and black pepper. If anyone recognizes this vintage chip bowl from 80s, gold star.
