The "Ultimate Teriyaki Stir-Fry" Plus Microgreens!

Updated: Jun 1

Well, I don't think this was my best food photo. Again, I forgot the garnish! I had people over for dinner so photography was the last thing on my mind, it seemed rude to work on improving photos and not to sit down and eat with my guests :D

I found this recipe in Dreena Burton's cookbook but here is a link to it: https://dreenaburton.com/broccoli-vegetable-teriyaki-stir-fry-cashews-vegan-gluten-free/

I have made this twice and skipped the blackstrap molasses and everyone still thought it was great. I did however recently find out that blackstrap molasses are one of the best natural sweeteners to use! So I'm putting it on my shopping list to try a few things with molasses in the future.

For those of you unaware, "tamari" is simply gluten-free soya sauce. You can use soya sauce.

I used different vegetables both times I made this. The first time (pictured) was zucchini, yellow peppers, mushrooms, snap peas, carrots and about 2 cups of pea and sunflower Microgreens stirred in at the end. Just be careful that the greens release a lot of water as they heat/shrink so add only minimal water to the sauce beforehand, or give the sauce time to boil away the excess water after adding them.

The baked tofu recipe is amazingly spectacular and easy, I have made it about 5 times in the past month (in the air fryer of course.)

The cashews are marvelous is this recipe too, some people prefer them crushed on top at the end but I like how they get softer if they are cooked in the pot, as in the recipe.

If you need Microgreens to do this snazzy recipe, I have them and can deliver them to you! www.greenstockfarm.com/shop
