My mom made this ratatouille so I do not have a recipe for it today but it is generally zuchini, mushrooms, onions and tomatoes sauteed in olive oil and spices :) This is more of a lazy solo meal idea where I used a base of leftover brown rice, threw 1.5 cups of sunflower microgreens on it, then poured the ratatouille on top and microwaved it for 2 minutes, sprinkled nutritional yeast, crushed red chilis and black pepper on it and voila, dinner in 2 minutes.
I never really liked that Ratatouille movie for some reason, maybe it is because I knew someday my own mascot Sunny would be much cuter and way more stylin'.
