I have been hearing a lot lately about curcumin which is an ingredient of turmeric, and is suspected to be the reason people in India don't suffer from as many chronic diseases as North Americans. Dr. Greger of nutritionfacts.org recommended a teaspoon a day of turmeric so I've started adding it here and there when I see fit, and this little leftover rice concoction was one of them.
Similar to the pasta post from a few weeks back, this is about as lazy as you can get while still eating healthy in a hurry. Leftover brown rice, about one large package (60 grams) of broccoli Microgreens, a teaspoon of turmeric, and a bit of Earth Balance (vegan butter.) That is all there is to it. Add any other vegetables from the fridge, cooked or uncooked, whatever you like. Add more spices if you like. You can be classy and cook it on the stove but I microwaved it and it was ready in 3 minutes.
Does it sound boring? Try it. I went back for seconds. I also like to add hot sauce instead of salt lately if something needs an extra punch. I read recently that mass amounts of salt, fat and sugar "numb" our taste buds, so the less you have of those processed things, the better your natural healthy unprocessed food will taste!
You can use this as a side dish as well which looks very pretty with its yellow and green.
Take a moment to note how few broccoli greens there appear to be in there, but yet there is around 1 cup! A lovely example of how they shrink when they are heated, so you can eat a LOT fast if that is your goal :)
