Again today is lazy, time-restriction meal day. This roasted eggplant recipe has a bit of an Indian feel (recipe below) but I only used 1 large eggplant, not 6 "Italian" aka small eggplants, I also used a lot less olive oil, and an air fryer for speed and it turned out well. Then I mixed in a LOT of broccoli Microgreens, a bit of sunflower Micros with a bit of vegan butter and a lot of nutritional yeast and crushed red chilis. And they lived happily ever after!
