Lazy solo cook time!
Northern Bakehouse Gluten-free Seeds & Grains bread is worth a mention, since not all GF breads are created equal. This is the only bread product I buy regularly. Their white bread is good too but I like the seeds and grains way more because they get crunchy when you toast them!
I gave up white flour during Covid lockdown when I noticed if I didn't eat wheat (aka regular ordinary GMO enriched white flour bread) I was WAY less tired. After several months of omitting regular bread from my diet, I also noticed I didn't seem to gain weight from the gluten-free bread and it didn't seem to have the addictive quality of wheat bread. Those two points may be related.
Then last year, I had no problems with wheat in European countries where pesticides like Round Up/glyphosate are banned (France, Germany, Italy but NOT Spain, NOT England. Watch out for non-organic oats in Canada, US and UK as well. Glyphosate is used to dry the crops and is not removed before you eat it.) So I have deduced that it is the pesticides from non-organic wheat that give me what feels like a hangover: tired, groggy, kinda cranky. I went who knows how many years being tired all the time from eating the wrong kind of bread all day! I've since then discovered I can also eat organic wheat here in Canada without worry.
I also watched a video yesterday about ancient grains, that they are more likely to reduce inflammation and can help reverse illnesses such as Fatty Liver Disease. Gluten-free breads tend to have a mixture of a few types of flour, I always believe variety is best in what you eat so trying out some different types of bread/pasta made of a variety of types of flour is a good idea for anyone to try.
So while being lazy yesterday, these cute little toasts came to be. In about ten minutes, from construction to in my belly, all I did was paint hummus all over my lovely Seeds & Grains GF bread, add sunflower microgreens and sundried tomatoes, throw in the air fryer for ten minutes and voila! Snack time. I did a before and after photo since this can be eaten without cooking too.
