Amanda's Thai Peanut Noodle Recipe: A Personal Fave

Amanda's Thai Peanut recipe has been a favorite for over 10 years. You can just make the peanut sauce minus the pasta, which is a big crowd pleaser for spring rolls (which you can make with Microgreens) or salad (of Microgreens.) You can make the sauce in the microwave if you don't have time for the stove. You can make this recipe with most but not all of the ingredients, (ie. without rice vinegar, or ground ginger, or carrots, or sugar, or the correct type of pasta) this I know from winging it while traveling but still succeeding with this amazing recipe! This recipe calls for fettucine, but you'll notice that I do a lot of switcheroos on recipes for whatever I've got around so this is brown rice spaghetti.


You can make this recipe with broccoli florets as directed and garnish with micros but I highly recommend switching out the regular broccoli in the recipe for broccoli Microgreens. But, don't boil the Microgreens (as directed with the broccoli florets), instead stir them in just before serving. I'd say at least 60 grams (one Eco size pack) of broccoli shoots are needed, but they shrink so aim high. You can also try throwing in other kinds of Microgreens. I stirred in cooked edamame beans and garnished with more broccoli greens on top.
