A Healthy Grilled Cheese Sandwich With Microgreens!!

Here is another solo lazy recipe. I make everything in the air fryer because it is so fast and easy so you can make this grilled cheese sandwich (or many of them?) in less than ten minutes.


I use gluten-free bread (Northern Bakehouse) which has a healthier and quite a bit more diverse flour blend than white bread and also has seeds and nuts in it. Plant ingredients in this bread include tapioca, potato, corn, brown rice, sunflower seeds, millet, flax, chia, pumpkin seeds, pea, and rice bran to provide a lot of fiber and a lot of iron.


I use Daiya "cheddar" slices which are plant-based and tend to be made of pea protein and other plant foods, so I would consider this, although still processed, also a healthier alternative than the usual cheese. This one has oats, pea protein, tapioca, corn, coconut, konjac, pepper, apple, tomato, pumpkin in some way or another in its ingredients. Daiya has come a long way in the past 8 years in improving their "cheese" to be pretty darn convincing but as I have mentioned before, once you give up cheese you kind of just stop caring about it. So cheese for me is when I'm being lazy and making easy recipes of the past. I was obsessed with cheese until 8 years ago but now it is definitely not a daily staple, it is more like a once every week or two thing. For those of you who have never looked into why cow cheese is so addictive, it is because there are opioids (yes, like heroin) in cow milk, which makes sense so that a calf will be addicted to its mother's milk. Another interesting fact is that the calf will grow 200 pounds in one year from that milk. Imagine what it does to a human body in one year, or longer? Sounds like trouble.


So in my grilled cheeses I usually add dijon mustard and tomatoes. I forget where I got this custom, the tomatoes probably in the UK from "toasties" which is their word for grilled cheese sandwich, but the mustard I'm not too sure but let me tell you it is super delicious. And then I added broccoli Microgreens to make it more colorful, more delicious, more nutritious. I also added broccoli micros and pickled yellow beans for garnish/as a mini salad. So there you go, a pretty darn healthy grilled cheese sandwich you can eat a bunch of and not feel guilty.
